The village of Saint-Aubin close to Puligny-Montrachet and Chassagne-Montrachet produces mainly white wines with some exceptions such as Les Frionnes.

This wine is produced from a vineyard which is south-east oriented in a rather windy location, behind the village of Gamay. The grapes there tend to reach their full ripeness much later. Some patience is needed before harvesting.

Grapes are destemmed and ferment during about 4 weeks. Aging takes place in barrels for 18 months (1/3 new barrels).

This wine is usually dense with very nice and deep colour. The nose is spicy with some licorice also.

Aging potentiel 5-7 years and more.
